This one needs environment variables set before it will start: OUTLOOK_CLIENT_ID (Your own Azure app (client) ID. Leave unset to use the shared app for personal accounts.), OUTLOOK_TENANT (consumers (default), organizations, common or a tenant ID.), OUTLOOK_READ_ONLY (Set to true to expose only read-only tools.), OUTLOOK_TOKEN_STORE (auto (default), keychain or file: where the token cache is stored.). The author declared them in the registry entry; get the values from the project itself.
